Steven Crawford, formerly employed as Sous Chef at Southern Sun’s Beverly Hills Hotel, is the newly appointed Head Chef for The Square Boutique Hotel & Spa in Umhlanga Ridge, the new sophisticated four-star establishment that emits a fast, city slick mood on Durban’s north coast, set within a vibrant and active mix of retail and commercial properties.
Crawford qualified in 2005 at the Christina Martin School of Food and Wine, earning the City and Guilds Qualification the same year. He joined Beverly Hills Hotel as Chef de Partie in April 2007 after returning from the UK where he worked as Commis 1st at the Wentworth Golf Estate in Surrey England, and as Chef de Partie at Redesdale Arms Hotel England straight after graduating.
Crawford received first place as chef of the year at Chaine De Rotisierre, awarded the best fine dining restaurant in KwaZulu Natal in 2008, also responsible for the Sugar Club Restaurant, a 60-seater exclusive fine dining restaurant inside the Beverly Hills Hotel, monitoring and training chef de parties, demi chefs, casual cooks and 40 kitchen staff.
In addition, he was in charge of general running of kitchens, also overseeing the Elements Café and Bar inside The Beverly Hills, working with the executive chef maintaining five-star quality during preparation and service, ensuring quality control, training of staff, menu design and implementation, designing and monitoring of rosters, and left in charge of high profile sports players such as the Springboks, Manchester United, Australia, and New Zealand SPORTING teams.
Crawford will be an invaluable addition to the Square’s onsite Cosmopolitan restaurant, open for breakfasts, lunches and dinners to public and guests, serving all types of cuisine, a la carte and buffet style, serving innovative and fun dishes.
